Installé à Courgis, le Domaine Pattes Loup est repris en 2004 par Thomas Pico, qui engage rapidement la propriété familiale dans une démarche plus exigeante, à la fois sur le plan de la qualité des vins et de la culture des vignes. Convaincu de l’importance de préserver les sols et l’équilibre naturel du vignoble, il convertit progressivement l’ensemble du domaine à l’agriculture biologique, certifiée en 2009. À ses débuts, ses trois hectares lui permettent de réaliser une grande partie du travail à la main, avec un travail du sol mesuré et une utilisation minimale d’intrants. Aujourd’hui à la tête d’environ huit hectares, Thomas Pico poursuit cette même philosophie, nourrie par les échanges avec des vignerons voisins partageant sa vision, comme Alice et Olivier De Moor. Malgré les aléas climatiques récurrents du Chablisien, il élabore des vins précis, lumineux et profondément attachés à leur terroir. Des cuvées comme Vent d’Ange, Butteaux ou Côte de Jouan illustrent particulièrement bien son style, entre fruit éclatant, tension, profondeur et minéralité.

Pattes Loup — A Pure and Vibrant Expression of Chablis

Based in Courgis, a small village in the Chablis region, Domaine Pattes Loup was created by Thomas Pico after he returned to his family estate in 2004. Raised in a family of winegrowers, he developed an early connection to the vineyard before completing formal studies in viticulture and oenology in Beaune. From the beginning, his ambition was clear: to produce Chablis with greater depth, energy and precision while farming in a way that respected the environment and the natural balance of the vines. Thomas initially worked with just a few hectares, allowing him to carry out much of the vineyard work by hand and to follow each parcel with great attention. Influenced by like-minded neighbours such as Alice and Olivier De Moor, he progressively converted the estate to organic farming, achieving certification in 2009. Today, the domaine covers around eight hectares, all farmed organically, with restrained soil cultivation and minimal use of inputs. In the vineyard, the focus is on preserving living soils and encouraging the vines to develop naturally rather than relying on excessive intervention. This demanding approach is particularly important in Chablis, where difficult weather conditions can make organic viticulture challenging. Despite these risks, Thomas Pico has remained committed to a philosophy based on observation, patience and respect for the character of each site. The same restraint continues in the cellar. Vinification is designed to protect the purity of the fruit and the tension of the wines rather than impose a technical style. The resulting cuvées are known for their brightness, depth and strong mineral identity, combining the freshness traditionally associated with Chablis with a broader, more textured and expressive profile. Wines such as Vent d’Ange offer immediate energy and vivid fruit, while Premier Cru bottlings such as Butteaux and Côte de Jouan reveal greater complexity, structure and remarkable mineral intensity. Across the range, the wines remain precise, vibrant and deeply connected to their origins. Through organic farming, careful observation and a highly personal approach to winemaking, Thomas Pico has established Pattes Loup as one of the most distinctive contemporary voices of Chablis. His wines offer a compelling interpretation of the region: pure, energetic and profoundly expressive.
